These are some of my all time favorite dishes to prepare that incorporate Amsoy. Now of course, I didn't include the recipes, because I want you to come visit me and taste these works of art at my food truck! I'll have my hours and locations up soon enough. I'm reevaluating where to sell, so as soon as I solidify my decisions, you all will be the first to know. However, I would like to at least tell you about how amazing these dishes are.
BEEF AMSOY SAUTE.
I cook this at least once week. Its quick, its easy and its filling. Its got the most important parts of eating covered with no problem. I usually keep the flavors in this dish pretty simple, using salt and pepper to taste, but sometimes I'll spice things up and throw an Asian or Mexican spin on it by using vegetables and seasonings that are common to those cultures. Either way, it always turns out delicious.
GENG WITH AMSOY.
This particular dish is what you could call a true comfort food dish. Its a soup, so its very reminiscent of grandma's chicken noodle soup or mom's good ol' beef stew. There's lots of broth, meat and vegetables. If you grab yourself a roll or a biscuit, you'll be full the rest of the day for sure. I'm a fan of fixing this dish quite often in the fall. There's nothing like a bowl of Geng to warm you and your taste buds up.

If you need some go to side dishes, these are it. I don't know about you, but I get tired of eating the same old broccoli, green beans, spinach, brussel sprouts, etc., etc. These dishes work so well for any type of cuisine. Whether you're serving egg rolls or meatloaf, they work.
PORK LO MEIN WITH JASMINE RICE AND AMSOY.
I mean, who doesn't love Lo Mein? I on occasion like to indulge in some take out Chinese food, but most times I actually like to prepare authentic Chinese cuisine for myself and my customers. I know for most places you go, you are only allowed one starch side. But hey, why eat one when you can have both? So yes, give me the Lo Mein noodles and the Jasmine Rice. Please and thank you.

*using my British accent* Ah yes. Nothing beats these little delicately delicious morsels. *clears throat and switches back to my wonderful New York accent* Every now again I like to have a tea party with my wife Jess (I'm completely secure in my masculinity and love getting in touch with my feminine side). We sip on Earl Grey and munch on these flavor packed little suckers.
